Chocolate Coconut Scout Cookies

Because when your 16 year old says ~ let's cut out the gluten and bad sugars k? You say hell yess {and you get out a yummy cookie recipe as soon as possible}! These don't disappoint.

Adapted from "Primal Cravings" cookbook.

3 3/4 Cup unsweetened coconut shredded

2/3 Cup coconut sugar

3/4 Cup coconut oil, melted

3 Eggs

A bunch of vanilla bean powder

A bit of cinnamon Stevia sweetened chocolate chips

Mix everything but the chip in a bowl and fold them in once everything's nice and combined

Form into balls about 1 1/2 inches in size and gently push them onto a greased cookie sheet to form a small disc

Bake in a pre-heated 350 degree oven for about 15 minutes
